Sodium Carboxymethylcellulose (CMC) can be used in a wide variety of food and beverage applications. CMC is water soluble and has several functionalities, such as thickening, stabilizing, preventing syneresis, enhancing texture, and improving mouthfeel. It is suitable for hot and cold use. Sylvacel CMC MF7 84 offers a medium viscosity in a 2% solution.
