Textrion PROGEL 800 is ideal as a functional ingredient adding viscosity and texture to food applications and especially in yoghurt applications. It has consistent viscosity control and exceptional serum binding properties. Textrion PROGEL 800 is soluble and gels over a wide pH range. Textrion PROGEL 800 forms a firm elastic gel when heated and has higher gel strength and water binding properties than other high gelling whey protein concentrates. Textrion PROGEL 800 is characterized by a clean neutral flavour and aroma. Textrion PROGEL 800 adds viscosity and minimizes serum formation in set or stirred yogurts and dessert products. It also provides texture improvement and emulsification to a variety of meat, bakery and convenience foods.
