Certain food-grade acids, alkalis and salts may be employed to assist caramelization. Thanks to its redish paprika tone, the Class I Caramel Color RT175 is the perfect fit for cinnamon, cocoa, or coffee extension. Powder Caramel Color often work best in dry blend applications and they have a longer shelf life than liquid Caramel Colors.
