CARAMEL COLOUR 1100 E150a (“class I”), of neutral to slightly negative colloidal charge, obtained by controlled heat treatment of food carbohydrates. 1100 is a Class I Caramel Color with a strong average tinctorial power of 0.100. It is recognized as the color of choice of the spirits industry thanks to its high stability in high alcohol environment and its specific yellow tones. To promote the caramelization acids, basis or salts can be used except sulfite and ammonium compounds.
