Rapidase® Press KPO is a kosher (for passover) and halal certified liquid containing polygalacturonase (pectinase) derived from a selected strain of Aspergillus niger. Standardised activity ≥ 180000.0 AVJP/g. It is specifically developed for apple and pear pulp maceration, but also works well on berries. It hydrolyzes soluble pectin in cell walls, decreases mash viscosity, and improves juice extraction and yield. Appearance: Amber liquid (product colour may vary from batch to batch). The producing micro-organism is of non-GM origin. Preservative free. Suitable for vegans and vegetarians. This maceration enzyme is suitable for organic and KPO production.
