Orafti®ST-Gel is a kosher and halal certified food ingredient consisting mainly of inulin derived from chicory. Orafti®ST-Gel is a special instant powder. Inulin consists of oligo- and polysaccharides composed of fructose units linked together by β-(2,1)-linkages. Almost every fructose chain is terminated by a glucose unit. The number of fructose and glucose units in inulin (Degree of Polymerization = DP) ranges mainly between 2 and 60. Appearance: Fine, white to slightly yellow powder. Nutritional benefits: improving the balance of intestinal flora; supporting fiber enrichment; reducing food intake; reduing fat content; and increasing calcium absorption. It is an ideal fat replacer and is easily incorporated in moist or semi-moist food products.
