Mycolase™ is a kosher and halal certified enzyme preparation for food use containing a-amylase (a-amylase) derived from a selected strain of Aspergillus oryzae. Standardised activity: > 2250 FAU/g. Recommended in a wide variety of applications e.g.: potable alcohol / spirits. It improves saccharification of liquefied starch. Support saccharification during mashing, mainly releasing maltose (useful to ensure desired maltose content in the wort). Also used in fermentation, to restart sluggish fermentations. Also suitable for vegans and vegetarians.
