GELCARIN® FF 39 is an alginate blend composed of sodium alginate (E401), calcium sulphate (E516), tetrasodium diphosphate (E450), and sugar. It is an off-white powder manufactured from brown seaweeds. GELCARIN® FF 39 is designed for Whipping cream with good Freeze/thaw stability. Forms the body and taste sensations in the finished cream. Standard whipping time. Increases the shelf life of the finished cream. GELCARIN® FF 39 provides water gelling, texture and syneresis control. It enables transparency and adds elastic texture. Also, it ensures superior shelf stability in dry mixes. GELCARIN® FF 39 is GMO free, Halal and Kosher certified.
