Excellion® EM 20 is a roller dried low-viscosity and partially hydrolysed milk protein. It is a type of sodium caseinate and is prepared from fresh skimmed milk. It acts as an emulsifier / stabiliser and as a high-grade protein source in e.g. meat products.
