BakeZyme® Go Pure is a kosher and halal certified enzyme preparation for food use containing glucose oxidase (IUB: glucose oxidase), derived froma selected strain of Aspergillus niger. Standardised activity: 3150 GOPU/g +/- 5 %. It is developed for milling, bread, and other bakery applications (flour, tortillas, flat bread, and pizza). Creates strong and more tolerant dough, Improves dough stability while maintaining extensibility. Suitable for long fermentation processes. Typical dosage: 5 - 40 ppm. In the producing micro-organism functional genes have been introduced and multiplied using biotechnological techniques.
