BakeZyme® GO Classic 1500 BG is a kosher and halal certified enzyme preparation for food use containing glucose oxidase (IUB: glucose oxidase) derived from a selected strain of Aspergillus niger. Standardised activity: 1500 SRU/g. Recommended in a wide variety of applications e.g.: baking: bread, flour, and steam bums. Strengthens the gluten network, gives dryer dough and works synergistically with hemicellulases. Creates tight and dry dough with more tolerance. Is very effective in short process. Typical dosage: 30-120 ppm.
