BakeZyme® BXP 5001 is a kosher and halal enzyme preparation for food use containing endo-xylanase (IUB: endo-1,4-ß-xylanase) derived from a selected strain of Bacillus subtilis. Standardised activity: 5000 NBXU/g ± 5 %. Application market: all applications where slackening and stickiness is not acceptable and especially for bakery products (bread, flour, biscuits, crackers, tortillas, flat bread, pizza, and steam bums). It is used to improve the dough quality, particularly the volume. Typical dosage: 30 - 60 ppm. Good synergy with HSP.
