Sodium carboxy methyl cellulose (CMC), also known as Cellulose Gum, can be used in a wide variety of food and beverage applications. CMC is water soluble and has different functionalities, such as thickening, stabilizing, preventing syneresis, enhancing texture, and improving mouthfeel. It is suitable for hot and cold use. Sylvacel CMC LF7 59 has a low viscosity, providing superior stabilizing functions in flowing liquids.
